Gluten Free Triple Chocolate Cookies

I have no idea where I got this recipe... Some how I must have inherited it over the years, but I am sure glad that I found it. These are truely amazing chocolate cookies that leave nothing to be desired. They are even still soft the next day. I hope you enjoy them as much as I do.

Ingredients:
1 Cup White Rice Flour
1 Cup Almond Flour
2 ½ Tablespoons Cocoa Powder
¼ teaspoon Baking Powder
¼ teaspoon Salt
2 Each Eggs
¾ teaspoon Vanilla Extract
2 teaspoons Instant Coffee Powder
5 Tablespoons Butter
2/3 Cup Brown Sugar
½ Cup Granulated Sugar
2 Cups 70% Dark Chocolate, Melted
1 ½ Cups Dark Chocolate Chips

Method of Preparation:
1. Preheat oven to 325 F.
2. Sift together the flours, cocoa powder, baking powder and salt.
3. In a seperate bowl, beat the eggs, vanilla and instant coffee until frothy.
4. Cream together the butter and sugars until light and fluffy.
5. Add melted chocolate all at once to sugar mixture.
6. Blend in the egg mixture until fully incorporated.
7. Blend in the sifted flours then fold in the chocolate chips.
8. Scoop cookies onto a pan and bake for 6 minutes.
9. Rotate the pan and cook for an addition 6-8 minutes.
10. Remove cookies from oven and enjoy.
