Sizzling Steak Fajitas

If there is one thing I really love, it is eating with my hands. Tacos and sandwiches are among my favorite foods. This cold snap in Chicago really left me with desire to cook up something with a kick. These fajitas satisfy both of those cravings. They pack a nice punch of flavor and heat from the spice blend, and a little bit of tang compliments of the fresh lime juice. Another great thing about fajitas, they make your home smell DELICIOUS...

Yield: 4 Servings

1 each Lime, Halved
3 Tablespoons Vegetable Oil, Divided
2 teaspoons Garlic, Minced
1 teaspoon Ground Cumin
1 teaspoon Ground Coriander
1 teaspoon Chili Powder
½ teaspoon Ground Cinnamon
1 Pound Flank Steak
1 Tablespoon Vegetable Oil
1 Each Yellow Onion, Cut Into Thin Half-Moon Slices
1 Each Yellow Bell Pepper, Cut Into Strips
1 Each Red Bell Pepper, Cut Into Strips
1 Each Green Bell Pepper, Cut Into Strips
To Taste Kosher Salt and Ground Black Pepper
8 Each Whole-Grain Tortillas

Crispy Cabbage Slaw
3 Cup Broccoli Cole Slaw
3 Tablespoons Fresh Lime Juice
1 Tablespoon Vegetable Oil
2 Tablespoons Cilantro, Minced
To Taste Kosher Salt and Ground Black Pepper

½ Cup Cilantro, Roughly Chopped
2 Each Limes, Quartered
1 Cup Radishes, Sliced
1 Cup Sour Cream
1 Each Avocado, Peeled, Pitted and Sliced

Method of Preparation:

Heat the grill or broiler to medium-high
Squeeze the juice from 1 lime into a large bowl
Add 2 Tablespoons of vegetable oil and spices
Add the steak to the bowl, cover with plastic wrap
Refrigerate for at least 1 hour
Remove the steak from the marinade and place on the grill
Cook the steak for 3 to 4 minutes on each side
Cook steak until it reaches an internal temperature of 135°F
Remove the meat and place on a large platter to rest
Meanwhile, heat the remaining oil in a large skillet over medium-high heat
Cook the onion slices and bell-pepper strips, stirring every minute or so
Cook until they are browned and softened, 6 to 8 minutes
Place the sautéed onion and peppers on the plate with the steak

To Make The Slaw:
Combine broccoli slaw with the lime juice, canola oil and cilantro
Season to taste with salt and pepper and mix well to incorporate and set aside

To Serve:
Slice the flank steak against the grain into thin slices
Return the slices to the platter
Set out the platter with the steak and veggies alongside the slaw
Set out the assortment of the garnishes
